David Glass Reduces Fat
For an indulgence with less guilt than usual, there is the new reduced-fat chocolate truffle cake from David Glass. It is dense, iced with bittersweet glaze and decidedly rich. It has a deep chocolate flavor, but the texture is a trifle more cakey and less softly fudgey than the full-fat version.
Instead of 282 calories a slice (a seventh of his regular six-inch truffle cake), the reduced-fat version has 274, and four grams of fat. "It's the first time I have baked anything without cholesterol," Mr. Glass said.
